Panzarotti!

I actually have a recipe blog that I started, but I've been crappy about taking pictures of the foods before I post, so I don 't bother posting, I plan on getting on top of that eventually.
Tonight I was at my moms house and I found my potato croquet recipe pinned to her bulletin board, so I decided to make them and they came out just as good as I remembered, so I figured I'd share my recipe.

Panzarotti (Potato Croquets)
Ingredients:
4-6 small potatoes
2 eggs (yolks) save whites
Salt & pepper (& garlic powder if you wish)
Parmiggiano (2 tbs per potato)
Shredded mozzarella cheese (or a tiny square of an american cheese slice )
Breadcrumbs (I like to use the Italian style seasoned)

Procedure:
Boil and rice potatoes
Add cheese
Add egg yolks only, salt & pepper
Mix it all up and make balls (or potato shape).
Make indentation & put a small amount of mozzarella
Close potato.
After all are made, pass in egg whites, then bread crumbs
Deep fry until golden brown.
